Thanks for your note.  While it may seem that I turn a pack of wild monkeys loose on the sports pages each week to come up with my recommendations, let me assure you that's not the case.
 
I do actually spend quite a bit of time analyzing each game, looking at both teams' offensive and defensive strengths/weaknesses in an effort to predict how successful each team will be moving the ball on the ground and through the air.  My recommendations follow from that analysis.  I could include a lot of numbers each week along with the recommendations (e.g.- rankings, yards per game), but I'm not convinced that would make for interesting reading, although it may help convince readers I'm not using the wild monkey approach.  
 
Of course, my primary goal is to help people decide among several players they may be considering for their starting lineups the following weekend (secondary goal is to be entertaining while doing so).  Obviously, I realize that the number of players I recommend each week far exceeds the number of spots anyone has in their starting lineup.  Thus, I'm trying to group players into three categories:  definite starts, players who should be started only in deeper leagues, and players who shouldn't be started.  If someone happens to have 4 "definite starts" for 2 available positions, then from my perspective they can't make a bad choice.
 
If you have any specific questions about any of your teams, please feel free to send them in, and I'll do my best to answer.

Perhaps you'll get lucky and someone else in your league will overreact to a bad performance and cut someone they shouldn't (e.g.- someone in one of my leagues cut Matt Schaub this week after his dreadful performance against the Jets).

Looking ahead to the Week 4 schedule, here are 3 suggestions for defenses that might be available to fill in for the Eagles' bye week:

1) SF (vs StL)

2) Hou (vs Oak)

3) Was (vs TB)

You're right - the LT projection doesn't look good now.  However, to be fair, his injury last season (turf toe) wasn't age-related, and in spite of the injury he still wound up with over 1,000 yards rushing.  Given that, I still think it was reasonable to expect big things from him this season.  

You're also right about Sproles' ability, but I don't hear people making similar arguments about Chester Taylor in Minnesota or Jonathan Stewart in Carolina (again, that's probably due to LT's age).  Curtis Martin had a great season for the Jets at age 32 with a lot of previous mileage - he's obviously the exception rather than the rule, but it's not out of the realm of possibility.

From a fantasy perspective those that have LT's on their teams (and yes, I'm one of them) would probably be best-served if  the Chargers kept him out of this week's game with the Ravens and gave his ankle another week to heal.  My guess is that he'll still try to play, but I'm leaving him out of my lineups for Week 2 and looking for healthier options.

The others you list are all taken.  I also will need a defense for at least week 4 when the Eagles are off, who would you suggest?  Cadillac Williams is available and I will try to pick him up too but am not sure where I am on the waiver wire.  Your recommendation to trade Rodgers for Barber worked out in week 1 - I would have benched Flacco and would have started Jacobs over Barber and would not have had the high score.
